A quick recipe that literally takes 35 minutes to make, a cherry tomato soup!

Ingredients

900g/2lb cherry tomatoes sliced in half

1 yellow onion cubed

2 Cloves garlic sliced

1 cup of vegetable broth

2 tbls olive oil

tsp salt 1/4

1 tsp cracked black pepper

1/2 tsp dried basil 1 

pinch of thyme

1/2 cup vegan cream

Recipe

1. In a medium pot on medium high heat, pour in olive oil and sauté the onion and garlic for 5-7 minutes until golden brown.

2. Toss in the sliced tomatoes and lower the flame, simmer the tomatoes for 20-25 minutes until they break down. Stir every couple of minutes.

3. Add the vegetable broth and seasonings and cook for another 2 minutes.

4. Puree the soup and add the cream. Fix the seasonings if necessary.Top with more fresh cherry tomatoes and olive oil, or even some yogurt to add a freshness to it!
